Regardless of the weather or the occasion, I’m undeniably a soup lover. They are super tasty, nutritious, easy to cook and the perfect warm food at any time. It can be your meal on a lazy day or part of a multiple-course meal, for those when you’re inspired.
There are so many reasons to believe that, just like me, there are plenty of people who appreciate a nice bowl of soup or maybe will start from now on, that I couldn’t help myself on sharing this simple and delicious soup recipe.

Carrot & Tomato Soup

There are so many reasons to believe that, just like me, there are plenty of people who appreciate a nice bowl of soup or maybe will start from now on, that I couldn’t help myself on sharing this simple and delicious soup recipe.

Servings: 6 – 8
Ingredients:
2 – 3 onions
4 cloves of garlic
500 g of carrots (5 – 7 units depending on size)
2 tsp of vegan butter or 2 tsp of olive oil or simply some water (for oil-free)
1 l of vegetable stock of your choice
1 can of peeled/chopped tomatoes or 5 small fresh tomatoes
200 ml of plant-based milk (optional)
Season to taste (garlic powder, oregano, black pepper, etc.)

You’re also going to need:
A big pot – to fit all the ingredients.
A hand blender – to purée the soup
or
A normal blender and a recipient – in case the content doesn’t fit all at once.
Preparation:
Chop the onions and garlic.
Peel and then chop or grate the carrots in thin slices or use a food processor (the thinner they are the faster they’ll cook).
On the pot add the butter (oil or water), the onions and the garlic, cook it for 5 – 8 minutes without browning. Medium heat is ideal.
Add the carrots, the tomatoes, and the vegetable stock. Lower the temperature when it starts boiling and let it simmer, in low heat, for 10 minutes or until the carrots are tender.
Purée the soup. Caution: there’s the possibility of splashes.
Now it is time to adjust the seasoning and to add the plant-based milk of your taste. Keep it in low heat for about 5 minutes and mix it well.
The soup is ready to serve!
Storing options:
We’ve tested a few ways to store this soup, in case you wanna have it at a later time.
Refrigerator: up to 5 days.
Freezer: we try to consume within 3 months as a rule of thumb with frozen food.
